the Gluten Free Journey

 
 
 

I didn’t choose gluten intolerance for myself--or maybe, subconsciously I did.  If I could undo it--I would.  This isn’t possible, so, I accept it. 


To live a gluten-free life is to be conscious--aware of every obstacle that is encountered, every morsel consumed and then how it affects the body and either the feeling of well-being or of great discomfort.  Rather than taking food for granted, food is strongly considered for taste, texture, nutrition and finally-- tolerance. 


What food is missing from my life other than gluten?  All I can think of is .... pizza.  I have my own way of experiencing and enjoying gluten-free pizza, which I will share with you in the following pages, but I must admit that I miss picking up the phone and just ordering pizza.  Overall, that’s a small price to pay for feeling good enough to get on my bike and ride 25 miles, show up for music practice or cook a wonderful meal for my friends and family.
