This is an easy weekday meal to whip up. I try to get dh and I to eat fish at least once a week. It is a lean protein full of heart healthy fats. The nutritional benefits of fish vary by species and location of the catch. Generally speaking, wild caught fish is more healthy than farmed. Salad:
Using fresh greens from our local CSA (http://twosmallfarms.org), red peppers, a couple cherry tomatoes, a pinch of salt, pepper, fresh lemon juice, and extra virgin olive oil the salad was ready in a flash.
Fish & Pesto:
Tiliapia filets were thawed in the refrigerator all day and then lightly coated with egg and a bit of seasoned flour.
Arugula pesto was made in my food processor:
Pesto ingredients:
1 1/2 C arugula (about a bunch)
1/2 C parmesan cheese
2 tsp crushed garlic (or 3-4 cloves fresh garlic)
Drizzle enough oil (I used Grapeseed) to meet your desired consistency
Salt & pepper to taste
Don’t forget to squeeze lemon on top of it all!
