Really hungry, simple, easy, fast and healthy!
 
I really like this picture and the anticipation that goes with it.  There are any number of good things that could be put on that red plate.  What would you put on that plate?

The tomatoes are from my backyard so I think they really qualify for what’s called eating locally!

I don’t really consider this a recipe.  I do consider it end of a long day, I’m really hungry, simple, easy, fast, and healthy.

France has the Croquet-Monsieur and Mexico has the Quesadillas.  And while I love the Croquet-Monsieur it doesn’t have much variety or it just isn’t a Croquet-Monsieur.  The Quesadillas on the other hand seem to be open to a great variety of ingredients.  

The night after our garbage disposal episode, I needed something that didn’t require any shopping and not much fixing.



On this night, I sautéed some small portobellos, sweet texas onion, fresh corn off the cob and a hot Italian turkey sausage.  I heated up the griddle.  
Laid out three tortillas and topped them as follows:
baby spinach
thin slices of apple
portobello mushrooms
onion
corn
sausage
grated jack-cheddar cheese

Sprayed the tortilla top and bottom with olive oil Pam.  Toasted them on the griddle.


Sorry, no picture of the quartered  Quesadillas on the plate.  They were gone before I remembered to take a picture.
