You must try the jalapeño margarita recipe. Technically we will consider it cooking because you must “marinate” the jalapeño. Just a few hours will do but DON’T forget to remove seeds. Trust me.

Jalapeño Margarita
put on your list of 1000 things to try before you die
1 jalapeño, sliced and de-seeded
1 1/3 cups tequila (something silver and good like Patron)
1 cup triple sec*
1 cup fresh lime juice (10 limes)
3 tablespoons superfine sugar
kosher salt and ice
1)In a jar, steep the jalapeño and tequila WITHOUT SEEDS for 1 hour.
2)Strain the tequila into a large pitcher and discard the jalapeño.
3)Stir in the orange liqueur, lime juice and sugar.
4)Pour the salt and a small amount of the margarita onto 2 rimmed plates.
5)Dip the rims of 6 glasses into the margarita, then into the salt.
6)Fill each glass with ice, pour in the margarita and serve.
*(Grand Marnier for brandy bent OR Cointreau for a crisp clean flavor - I’ve come to prefer triple sec with a neutral spirit base such as Cointreau)
Blood Orange Jalapeño Margarita

1 lime wedge and superfine sugar, for glass rims
1 cup Blood Orange Jalapeño Infused Tequila (recipe below)
1/2 cup Grand Marnier
1/2 cup fresh squeezed lemon juice
1 tbsp fresh squeezed lime juice
1 tbsp fresh squeezed orange juice
2 tbsp superfine sugar (or to taste)
4 slices blood orange, for garnish
4 Candied Jalapeños (recipe below)
1)Wet half the rim of 4 chilled martini glasses with lime wedge and dip rims into sugar. Set aside.
2)Combine Blood Orange Jalapeño Infused Tequila, Grand Marnier, citrus juices, and superfine sugar (to taste).
3)Pour half the mixture into a cocktail shaker filled with ice. Shake until chilled (about 15 seconds).
4)Strain into 2 of the sugar rimmed martini glasses. Repeat to make 2 more cocktails.
5)Garnish with slice of blood orange and a Candied Jalapeño.
Blood Orange Jalapeño Infused Tequila
makes 1 bottle
1 to 1 1/2 lbs blood oranges, thinly sliced
2 jalapeños (stemmed and sliced in half lengthwise with seeds removed)
1 liter bottle of Patron Silver or Herradura Silver tequila
1)Place oranges and jalapeños in a glass jar or container.
2)Pour in tequila.
3)Seal and store in a cool, dark place for 7 to 10 days (save tequila bottle).
4)Strain tequila through cheesecloth or fine sieve and pour back into reserved tequila bottle.
5)Seal and store in refrigerator up to 3 months.
Candied Jalapeños
4 jalapeños
1 cup water
1/2 cup sugar
1)Thinly slice jalapeños crosswise.
2)In a small sauce pan, combine water and sugar and bring to a boil.
3)Add jalapeños, reduce heat, and simmer for 5 minutes
4)Remove from heat.
5)With a spatula, gently remove jalapeños from liquid and lay flat on parchment paper to dry.
6)Store in a sealed container up to one week.

1 oz peach schnapps
1 oz tequila (something good like Patron)
1 oz sweet and sour mix
1 dash grenadine syrup
peach slices
ice and glass with salted rim
1)Pour tequila, schnapps, and sweet sour over ice in salted margarita glass.
2)Add grenadine.
3)Stir slightly.
4)Garnish with fresh peach slice and serve.
