I do Burgoo and I have been Burgoo-ing since 2001 when I helped open the first Burgoo on West 10th in Vancouver. In 2005 Burgoo II ( Lonsdale area )in North Vancouver was opened  and now Burgoo III on Main and 16th will be opening later this Spring.

I’m proud to be apart of all three restaurants in creating their warm interiors. This all started when Justin Joyce the owner, came to me asking if I could created finish for their walls that conveyed character, Old World presence and comfort.

I love it when I have to create Old World look, thinking of the way it was ‘done back then’ and ‘how did they do that?’


Every one of the Burgoo interiors have evolved with the same concept for the wall finish, rustic weathered plaster walls. I used plaster, coffee grinds and carnuba wax to create the wall finish in the first two restaurants. On Main St the new restaurant, I am actually using environmentally friendly “green” lime plaster. The product has no VOC and it is organic, very cool stuff and it has been for thousands of years. Therefore actually using a product and techniques from the Old World for Today and it is good for our modern world.
