When play time is over & it’s time to work,

thankfully, I usually find myself having equally as much fun.

In my 5th or so year of working specifically as a bartender,

I’m fortunate enough to find myself in a rather acceptingly progressive &

collaborative environment, permitting a practice of my craft

in both it’s classic & creative forms;

an even rarer treat considering I am far from any major metropolis.


And so, I attempt to encapsulate the beverage program into the

larger dining experience for the guest, having personally been too often disappointed with restaurants whom excel in all other areas but leave

the beverage program a bit dry. Seeking to establish a libation adventure that is both reminiscent of the craft’s early 20th Century ‘hey-day’ as well as a leading representation of today’s creative cocktailing, we strive to

evangelize the well~crafted cocktail with quality hand selected spirits &

fresh daily ingredients mixed into signature cocktail design,

artisan crafting of historically accurate classic cocktails &

even an occasional splash of culinary & molecularly derived mixology.

These historical skills combined with an obsessive curiosity

for today's 'liquid art,' result in fresh & well balanced drinkable delights.


Much time is spent on the development of new cocktails,

doing so based on the desire to create a particular experience,

utilize a certain spirit, pay homage to a region or individual or

just meld with the seasons food flavors.

Often conspiring with the kitchen, we source unique ingredients of all types

to create layers of flavor that are designed to either be enjoyed

alone in quiet contemplation or paired specifically with food offerings.

For those not interested in spirits, we offer a selection of equally important house~designed 'mocktails' from an ever changing seasonal selection.


We regularly study & consult with our colleagues in the industry &

hope to share those experiences here along with our techniques & recipes,

in an effort to lean along with each other...

despite all of the, in some folks’ eyes, ‘fancy’ things which spring from

our passion for this trade, we are in this to make a tasty &

enjoyable experience & are forever learning...
