Antipasto Estivo
 
1 loaf of bread
¼ lbs of Pecorino Fresco Cheese
1 jar of Pesto
1  jar (85g) of mushroom spread or fresh mushrooms
 
Cut the bread in thin slices. Spread a nice portion of pesto on top of the bread. Cut the Pecorino cheese in slices and put on the bread a slice. Let the cheese melt on the pesto and bread. Once melted,  put a little ball of mushroom spread or grilled mushrooms on top of the  slice of bread with the pesto and the melted cheese and it’s ready for serving.
 
It’s a quick and simple recipe, but very tasty!
