Yesterday, Samuel and I decided to make another cake. :) I knew we were going to be having guests today, so we baked the cake ahead of time...which turned out to be a brilliant plan. I looked through about 4 books trying to find a cake we cold bake without having to run to the grocery store. We finally settled on the Cherry Strudel. I decided to substitute blackberries, since we have tons ripening every day, and needed to find a use for them. :) It was so quick, and quite yummy!!
(I´m working on converting the amounts into cups/etc...but that´ll take a bit of time. Hopefully that will be up tomorrow. :))
I should also add that this is Silke´s Aunt Giesela´s recipe! :) She lives right behind us, and whenever I make a cake, I always bring her over two pieces, too. :)
Blackberry/Raspberries/Cherry Strudel Cake
9 oz. all purpose flour
a squirt of lemon juice
1 egg yolk
5 oz sugar
5 oz margarine/butter
1 package vanilla sugar
about 1 1/2 lbs. of fruit
Mix flour, lemon, egg yolk, sugar and margarine in a bowl, and beat. Once the dough becomes a clumpy consistency, take about 2/3rds of the dough and put it in the bottom of a spring-form tin. Pat down firmly. Once the dough is patted down, add the fruit and the vanilla sugar, and then sprinkle the remaining strudel mixture over the fruit. Preheat the oven to 400*F and put cake in. Bake for about 30 minutes, and cool for about 2-3 hours. :)
This cake is QUITE yummy, and really really fast.
