   I made this today for the company we had, and it was quite yummy. It took me about an hour to prepare, and then a little over 35 minutes to cook, but it was pretty easy, and very good. I heartily recommend it. Once again, this takes a spring-form tin.
 
Quiche Lorraine
 
For the dough:
250 grams flour
125 grams cold butter
a pinch of salt
1 egg
 
For the contents:
200 grams bacon in thick strips
3 eggs
250 grams créme fraiche
200 g. fresh grated swiss cheese
salt & pepper
a pinch of nutmeg
 
butter/shortening to grease the pan
 
flour for the working surface
 
Preparation time: 30 minutes... (I admit, it took me about an hour, but then again, I was chasing after a 2 year old as well ;))
Baking time: 35 minutes
 
1. Mix flour, finely chopped butter, pinch of salt, and an egg in a bowl. Mix with mixer until it forms  a rather clumpy dough. Knead it with hands for a while until it becomes workable, and cover with towel and put in the fridge until ready to put in the spring-form tin.
 
2. Slice the end off the bacon (the skin), and chop the bacon into strips. After it is all cut, put the meat into a boiling pot of water for 2 minutes. Remove quickly and dry the meat on paper towel.
 
3. Mix eggs with the cream and stir in the grated cheese. Add salt, but just a bit as the bacon is already salty. Mix in a bit of pepper, nutmeg, and stir. Preheat the oven to 400*F.
 
4. Grease the tin, and roll out the dough on a floured surface. Try to roll it thin enough that there is about a 3 cm. ledge around the tin. :)
 
5. Sprinkle the bacon on the dough, making sure there are no bare areas. Pour the cream/egg mixture over it, and be sure the cheese is spread out evenly.
 
6. Put the Quichce in the oven and bake for about 35-40 minutes. It tastes especially delicious just out of the oven! :)
