Ingredients
- 1 lb. boneless skinless chicken breast, cut into cubes
- 15 tomatillos, chopped rough (15 to
- 1 onion, chopped rough
- 3 cloves garlic
- 3 jalapenos, seeded
- 1 bunch cilantro
- 1 cup cheddar cheese
- 1 can refried beans
- 1 cup chopped lettuce
- 1 cup chopped tomato
- 1 package corn tortillas
- 2 tablespoons oil
Method
Place tomatillos, onion, garlic, jalapenos, and cilantro into food processor or blender and process until salsa consistency is achieved. Place tortillas in foil package and warm in 250∞ oven. Place refried beans in small pot and heat. Heat oil in large pan over medium high heat and cook chicken until just done. Reduce heat to low. Add tomatillo salsa and cook additional 2 minutes. Spoon refried beans onto tortillas, spoon on chicken mixture, then add lettuce and tomato. Add salsa, guacamole, and sour cream if desired.
