Ingredients
- 1 red pepper, roasted, skin remove
- 3 tomatoes roughly chopped or 1 can chopped, (3 to 4)
- ½ medium red onion roughly chopped
- 1 small zucchini and/or yellow squash roughly chop
- 2 garlic cloves, minced
- ¼ cup chopped fresh parsley
- 2 tablespoons oregano
- 2 tablespoons extra virgin olive oil
- salt and pepper to taste
Method
SautÈ onion, garlic and zucchini with the olive oil over medium heat until onion has softened. Reduce heat to low and add all other ingredients and stir until heated thoroughly. Serve with toasted bread.
