Ingredients
- 1 lb. boneless skinless chicken breast, cut into medium piec
- 1 lb. smoked turkey sausage
- 2 medium tomatoes, peeled and chopped
- 1 cup onion, chopped
- ½ cup green pepper, chopped
- ½ cup celery, chopped
- 2 ½ cups low sodium chicken stock
- ¼ teaspoon salt
- ¼ teaspoon thyme
- ¼ teaspoon ground oregano
- ½ teaspoon paprika
- ½ teaspoon cayenne
- 2 cups hot cooked rice
- ¼ cup green onion, chopped
- 3 tablespoons fresh parsley, chopped
Method
Spray the inside of a large fry pan with cooking spray. Cook the chicken and sausage over high heat stirring constantly for 10 minutes until browned. Reduce heat to medium low. Add the tomatoes, onion, pepper, and celery and cook for 15 minutes; stirring often. Add the stock and spices, cover and simmer for 15 minutes being sure to stir often. Add rice, green onion and parsley. Mix together and serve.
