Method

Trim flowerettes from broccoli and cut into pieces. Peel stems and slice thinly. Melt butter, add curry and onion on medium heat. Stir 5 minutes. Add broth, potatoes, broccoli stems and carrots. Cover and simmer until potatoes mash easily, about 30 minutes. Blend until smooth and return to kettle. Heat to boiling, add flourettes and milk. SImmer uncovered until flourettes are tender. Stir in cheese a little at a time until melted.
