Ingredients
- 1 cup date sugar
- 6 Tablespoons oil
- 2 teaspoons vanilla
- 1 teaspoon salt
- 4 cups bananas, mashed, ripe
- 4 tablespoons lemon juice
- 2 ¼ cups whole wheat flour, pastry flour
- ¼ cup flax seed, meal
- ¼ cup wheat germ
- ¼ cup wheat bran
- 1 cup whole wheat bread flour
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup dates, chopped
- 1 cup pecans, chopped
Method
Preheat the oven to 350 degrees. Grease and 8"x4" loaf pan.
Use a fork to beat the sweetener and fat, vanilla and salt. Add the banana and lemon juice. Sift the flours and leavenings and mix the wet and dry ingredients. Fold in the dates and nuts, reserving about 3 Tablespoons of the nuts to sprinkle on top of the loaf before baking.
Spoon into the loaf pans and bake as long as and hour and a half, until done. Depending on the bananas, this bread can be very sweet.
