The journey started decades ago when Dan Estridge, Founder and Curator of Manhattan Deli-Arts began his quest to preserve for posterity one of New York’s most essential culinary treasures…The Great Lost Pastrami of old-time New York Delis. After all, the hot pastrami sandwich is the standard by which all great New York delis are judged.  And more - it is the essential taste of New York’s golden age.  The taste of the new world.  Of freedom even...  

After searching, digging and sifting through mountains of deli-rubble, he made a discovery so big, it is destined to become New York gastronomic lore, the unearthing of “The Deli Scrolls.”   Years of scholarly study decoding the Scrolls have finally led to the first of many hoped for discoveries - the secret ingredients and cooking methods of antiquity used to create THE Great Lost Pastrami.  These sacred Scrolls, and the miraculous treats they have taught us to prepare have inspired the birth of Manhattan Deli-Arts.
