Edgard Gallardo
is a graduate of The Institute of Culinary Education in New York City (2008 Award of Excellence from The International Association of Culinary Professionals) where he received his degree in Baking and Pastry Arts.
He has worked with one of New York’s most accomplished cake designers, Elisa Strauss, owner of Confetti Cakes. Edgard also studied with world renowned sugar artist Betty Van Nostrand as well as Ron Ben-Israel.
Chef Edgard is no stranger to cakes. He grew up helping his mother mix cakes since a very young age. Edgard comes to Cake Design as a continuation of a very creative life, after spending many years in Show Business as a professional dancer, singer and actor on Broadway. He also credits his “double Gemini nature” for his love of cake making and decorating...
