Corn Fritters    
 
 
1/4 cup finely chopped onions
1/4 cup chopped green pepper
1/4 cup chopped red pepper
1/2 cup frozen corn kernels
1/2 pound tofu cubed to about 1/2 inch
one corn meal mix according to directions (do not use premixed corn meal, many have lard listed as an ingredient) use the directions on the bag or find a good one.
while corn meal mix is wet fold in above ingredients.
Heat enough light olive oil to fry mixtures as fritters
drop in enough mixture to form a fritter 2-3 inches in diameter.
while you are cooking fritters mix black bean salsa
from scratch or using your favorite salsa with 1/2 can rinsed and drained beans
