On February 13th I kegged the Elliot Ness clone. It spent 4 weeks in the beer fridge aging. Yeah, a lager really should age for a lot longer than 4 weeks but I am not that patient...especially because I wanted to know if it was bad or not.
Since I ended up with more than 5 gallons of yield I had to put about 1.5 gallons into a second keg.
I am pleased with the result. I do not detect the usual “infection” taste that has ruined so many of my lagers.
I was talking with my new friend Chris and it is his opinion that most infections occur because of dirty kegs. I had come to the same opinion myself a few weeks ago which was why I had started taking my kegs apart and cleaning all of the tiny bits before kegging.
