Since the last of the Hefe (which was emergency brewed for the contest and then not needed/available) is gone it was time to replace it. Since success has been its name since January of ’06 I figured it was time to make 10 gallons.
Brian Courville was ready and due for another batch (his first and only was his bronze medal winner) so we set it up for the 8th.
He decided on a old style British bitter and we got all of stuff Saturday night and I got all of my stuff set the night before.
Brewing went OK. Brian’s mash was a bit too hot and my step mash was a bit too cool for the final. Then we didn’t get the sparge water going soon enough again so we had to mash a bit long.
Brian finished his boil with a spot on gravity and extra volume. I finished with a gravity that was a bit low but nearly two extra gallons.
We pitched some of the British dry yeast into Brian’s and it was fermenting after only 3 hours. The Hefe took a bit longer but by the following night I was blowing thru the airlocks on both of the Hefe carboys.
