New Holland Pilgrim’s Dole

A barrel aged wheat barleywine from New Holland Brewing, Holland, Michigan.

Pilgrim’s Dole is a barleywine, made with 50% wheat malts, that is aged in a twice-used bourbon barrel (first used to age the whiskey, then used to age New Holland’s Dragon’s Milk).  The resulting flavors extracted from the barrel are not as whiskeylike as Dragon’s Milk.. more oak and vanilla flavors are absorbed from the wood.  Interesting contrast.
