Pale Ale / IPA
Pale Ale: Definition
Pale ale is a term used to describe a variety of beers which use ale yeast and predominantly pale malts. It is widely considered to be one of the major beer style groups. The use of local ingredients produces variances in character from region to region. Generally, expect a good balance of malt and hops. Fruity esters and diacetyl can vary from none to moderate, and bitterness can range from lightly floral to pungent. American pale ales tend to be cleaner and hoppier, while British tend to be more malty, buttery, aromatic and balanced. For simplicity’s sake, we will divide the pale ale into three groups:
the Pale Ale, light in color, balanced flavors, hop bitterness should be in tune with the malt body, floral hops can be delicate or assertive. ABV = 4.0 - 6.5%
the India Pale Ale (IPA), is typically slightly deeper in color, with more malty sweetness in the body to counteract the higher doses of bittering hops. Top end bitterness is sharp, flavor and floral hops range from subtle to outlandish. ABV 5.0% - 7.5%
the Imperial or Double IPA, is an American art form. Huge hops form the backbone of the beer, with heavy malt sweetness a necessary counteraction. Massive hop flavors, big rich body, lingering bitterness characterize the style. ABV: from 7% to more than 12%abv.
